salad greens:  watercress, arugula, radicchio, red leaf and green leaf lettuce

vinaigrette:
2/3 c olive oil
1/3 c balsamic vinegar
3 T Dijon mustard
1 T finely chopped shallot
salt and freshly ground pepper to taste
