mary's garbanzo and feta salad

My former mother-in-law is a treasure and one of the best cooks and hostesses I know.  Now in her 80’s, you would be fortunate to get invited to one of her dinner parties!   I have so many of her recipes to share with you that I don’t know where to start…so how about a simple salad

  • 1 can garbanzo beans
  • 1 jar marinated artichoke hearts
  • 5 sun dried tomatoes
  • 3 oz feta cheese
  • 2 green onions
  • 2 T parsley
  • ¼ t dried oregano
  • 2 T artichoke liquid
  • 1 T white wine vinegar
  • 1 t lemon juice

 


As a bonus from Mary…a family favorite!

Serve this fabulous flank steak recipe on small buns for a party…thinly sliced…heat up some of the marinade to drizzle over the sandwiches.  It’s a guaranteed winner!
