¾ c chopped tomato
1 T Diced red onion
1 T chopped fresh cilantro
1 t lime juice
1/8 t salt
1 garlic clove, minced
1 c hot cooked jasmine or long-grain rice
2 T chopped fresh basil
1 c chopped red pepper
¾ c diced zucchini
¾ c diced yellow squash
¼ c diced red onion
2 T balsamic vinegar
2 t olive oil
4 fat-free flour tortillas
¼ c crumbled feta cheese

  1. Preheat broiler.
  2. Combine first 6 ingredients and set aside.
  3. Combine rice and basil, set aside.
  4. Arrange pepper, zucchini, squash and ¼ c red onion on a baking sheet.  Broil for 12 minutes or until the veggies are browned.  Spoon into a bowl.  Drizzle vinegar and oil over the veggies and toss.
  5. Warm torillas according to package instructions.   Spoon ¼c of the rice mixture down the center of each tortilla.  Top with ½ c roasted veggies.  Followed by 2 T of the tomato mixture and 1 T cheese.  Roll up.
