Left over herbs...cilantro, parsley, mint, oregano, basil, spinach...
Mix two loose cups of fresh herbs, 2 cloves of garlic, 1/4 cup of wine vinegar, lemon juice or lime juice, sprinkle of sea salt and blend very well in a blender. While blending, slowly add 1 cup of olive oil. Refrigerate for several hours, shake container to blend before use.
Be adventurous with the fresh ingredients and the use of the dressing. Sprinkle on salads, sweet corn, potatoes or for bread dipping.
Whisk a 1/4 cup fresh lemon juice and 1/4 cup olive oil for an easy, light dressing for a Greek salad, couscous or quinoa.
